Getting Fit and Less Obsessed: Monday, June 6th, 2011 (Beginning Week 4)






My Starting Weight: 129.6 LBS

My Current Weight: 132.4 LBS (Muscle?)

My Goal Weight: Between 110 LBS and 115 LBS- After this 10 week program, I feel like I'll pretty much be where I should be at. Wherever that is.

Diet for This Week:
  • 6 glasses of water a day
  • 5 servings of fruit per day
  • 5 servings of fruit per day
  • 2 servings of meat per week
  • 2 eggs per week
  • 3 servings of beans per week
  • 1 serving of nuts per day
  • 1 serving of dried fruit per day
  • 2 coffee's per week (Ugh...this one is hard for me)
  • 1 serving bread per day
  • 3 servings of yogurt per week
  • 1 serving of milk per day
  • 3 servings of oats per week

I go back and forth. I've been counting calories and it makes me sad.

Workout Plan For This Week:

-5 Mile Loop every day (walking)
-3 Runs Per Week
-Tae Bo Once Per Week
-Ab Workout DVD Once Per Week
-Timed Mile Run on Sunday
-Toning Exercises Daily


My Feelings on What I Look Like Now and How I Did Last Week:

I feel fat. Really fat. I think about how fat and gross and ugly I am every day. People, I am the opposite of "un-obsessed." I look like a blob. I'm pissed off. And I'm gaining weight. AWESOME. Hopefully I feel better soon?

Financial Planning: My Goals Before I Move

   I just did a bit of color-coded financial planning and I thought I'd share! My move is coming up (beginning of August to Boston, MA) and I also have my weight-loss rewards to plan for! Unless money falls out of the sky, or I get more work than I planned- I probably won't be able to afford some of the rewards I planned for but I can afford more than I thought!

My calorie budget is.....whatever per day. Things like avocados and bananas and tons of other healthy, great things are really high calorie foods and I cannot eat 1,300 cal's per day. Doesn't work. I'm not counting.

-5 Minute Run and 25 Minute Walk Monday, Wednesday, Friday
-Tae-Bo Tuesday for 45 Minutes
-Thursday "Extra Workout"  Dance for 20 Minutes 
-Thursday Tae Bo for 45 Minutes
-Sunday "Extra Workout"   Dance for 20 Minutes
-Saturday 5 Mile Loop (Walk)
-Sunday One Mile Timed Run
-Sunday Run Bleachers
-Everyday: "Pick 5 Toning" (Things like weights, jump rope, stairs, crunches, squats....etc)

I have to work on getting workouts done first thing. 

My Feelings on What I Look Like Now and How I Did Last Week:

Well, I actually feel like my legs, arms, and tummy are more toned but I want to start losing weight already. I know that I had way too much coffee (a Starbucks a day) and I didn't eat enough veggies but I've pretty much gotten rid of my overeating habit. I also drink more water, which is good. I feel really pissed off about the fact that I weigh more than when I started. Hoping it's just muscle gain not weight gain? Hoping I'll look good by the end of this. I need a work out partner.

My Mile Time: 13 minutes, 30 seconds (I walked most of it because my knee was tweaking out.)

Relationships: 11 Facts You Should Know About Living With Your Boyfriend


So, as most of you know: I live with my boyfriend (and I LOVE it!) But, um, needless to say- we do get on each other's nerves every now and then and he still manages to shock me. Here are some facts that may or may not apply to your guy and what it's like to live with boys.
Be prepared for lots of farts, weird crazy gross noises, and funky smells. 

1) If you are a neatfreak (like me) consider your lovely boyfriend to be your de-OCD bootcamp, because believe me, you're going to have to adapt.

2) Though I wish it did, living with your boyfriend does NOT mean 100% cuddles and snuggles at all times, whenever necessary or desired. Dudes need their "me time" too and they are not cuddle factories. Ethan always says he wishes he could make me a walking, talking Ethan-Robot to be there for cuddles when he needed to get shit done. Luckily, Ethan practices sax 6 hours a day, I have work 5-7 days out of the week, and that gives us enough space to miss each other and not want to punch each other out, most of the time. 

3) I thank GOD Ethan and I have our own rooms. He has his bedroom with his bed, computer, videogames, and sax-ness, I have my bedroom with my beautiful bed, freshly cleaned everything, writing/reading zone, and TV. I value my personal space and so does Ethan (and so does everyone). Some days, I just feel like doing my own thing, having some quiet time, and not being in girlfriend mode. On those days, Ethan does his stuff in his room or around the house or out and about with friends, and I do my things on my own. Sometimes, I'm a bad girlfriend and I nage Ethan about how messy his room gets. (I kid you not, there is dried avocado on his floor because he's such an avocado fiend.) But, technically, I believe you should let people treat their own space however it is and respect the sanctity of it. When Ethan's in my room, he knows not to wear shoes, to leave his dirty socks outside, and to help me make the bed. I'm totally anal about having a clean space, but he respects that. Personal space and respecting each other's personal space is so key. 

4) Fights you can put on pause when you live apart are a thing of the past. Many a time have we had stupid 3 in the morning fights and it's super exhausting but it definitely speeds up the resolution-process (unless you're like me and you clam up before you let anyone reach some sort of resolution.) Sometimes, I feel like the angry-married couple where he sleeps in his room for a few days, I sleep in mine, and we scowl at each other when we pass by one another. It's a whole new level of battle. 

5) Ethan sleeps in my room when we go to bed. We have our little routine. We watch some Futurama or some Southpark or maybe some Archer or Family guy and we turn the lights off, watch, snuggle, and fall asleep. It feels like a necessary part of the day for me. On nights where Ethan goes back to being his age and going out with friends, staying out til 3 in the morning or coming home the next day, I flip out. I can't sleep, I feel angry and worried- like maybe he's out cheating? But he's not. He's always doing what he said he was going to be up to and the insecure, mistrustful girl in me comes out. It takes a lot of adjusting to, first, get used to a relationship-routine, and then get used to the fact that you're not always going to be able to stick to your routine you made together. Because I cherish my time with him so much, I make sure to at least sneak in one meal with him every day, maybe a workout or a walk, and to go on a date every other week. That helps keep me sane, haha. When Ethan and I move to Boston, I'll have to readjust, flip shit a little bit, and come up with a new plan that fits both our schedules and needs. I told Ethan I'm making up a big white board bingo-chart, where we have to have X amount of things we make sure to do together during the week- that way he knows what I expect, and I don't get disappointed by the quality or how often we're spending time together. 

6) Maybe this happens in relationships, no matter what, but I have a birth control nag on my hands! Just in the middle of the day..... "Did you take your birth control?" or "You're taking it NOW? Aren't you supposed to take it in an hour?" or we'll be gettin' frisky and he'll pause and ask me, all panicked. No, boys. We do not want you to put a baby in us if we're on birth control. We've got it covered. (Well, hopefully you've got it covered.)

7) When you live with someone, they know EVERYTHING you do in the day. I mean everything. I like to be kind of mysterious and keep little secrets because I feel boring and sometimes gross if I don't but in a long term relationship where you live together- he knows. He knows when I overdraw my bank account, when I forget to shave my pits, when I have an upset tummy, and when I mope around all day feeling sorry for myself. Mostly, I've adjusted and I accept that I'm human-that shit happens- but sometimes I totally feel so much pressure to be perfect and girly and confident all the time and that's just not me. Not all the time, at least. 

8) You don't have sex every day! I thought, when you live together, that's just what's done but if anything, you do it less often. I kind of actually don't mind because I feel like if I'm over-sexed, I'll feel like that's all he's interested in, but I was totally shocked. I think when you do live together, you see each other more as a whole, and obviously, you don't get as much of a chance to miss each other and fantasize about what your relationship could be so sex doesn't tend to be the first thing on your mind. Or even the second. There's no mystery.

 "Did we remember to do our laundry?"
 "How was work?" 
"Let's cook together, I'm starving." 
"I know you had a really long day so I'm not even going to think of propositioning you."
 "We had sex 4 days in a row and I'm kind of burnt out. Let's read instead."

I feel like I sound like an old lady but I bet you anything, that's totally how it is for a lot of people. Plus, I have the added dynamic of being a freaker-outer sometimes during or after sex and that's a big turn off. Well, I shouldn't say that. I think it's more that I scare Ethan into staying away for awhile, because he's afraid he's hurt me somehow (which he never does.)

9) Money turns into an "ours" kind of thing rather than a "mine and his" dynamic. Again, I sound like a married old lady but I like to take care of Ethan when I can and he likes to take care of me and people don't tend to like to hear that we share each other's expenses, but whatever. It ends up being even. 

10) When you move in with a person, you find a lot more flaws in each other than you maybe would have cared to. Stupid flaws. "He forgets to flush" or "Her hair clogs the drain. That's totally gross." Or just any small personality-thing or habit- they're all a lot more obvious when you live together. I actually was never too bugged by any of Ethan's habits when I figured them out, but they're definitely a lot more obvious to me than they were before we moved in together- and I'm sure he could tell you loads of bad habits I have. 

11) When you live together (hopefully) your partner becomes your best friend. Ethan is my family, my best friend, where I go to when I need honest advice and criticism, and who I turn to when I'm at my lowest. It's pretty excellent.

I have to really work on building my stamina and strength. This past week, I couldn't even run the 5 minutes straight. I had to walk in between. I'm taking the time down to 4 minutes and hopefully I can actually do that. I do feel like working out and sticking to a schedule is getting easier, so far. I kind of wanted one break day.

My Feelings on What I Look Like Now and How I Did Last Week:

Well, I feel grosser than when I started out. I made the mistake of stepping on a scale in the middle of the week last week and I weighed like two pounds more than before. Super discouraging, even if it just has to do with water and muscle mass or whatever it was. Even though I'm feeling pretty gross, I am glad I was pretty good about my fitness program and I, mostly, ate what I was supposed to and I did my workouts every day-except I never got around to doing my two "extra workouts." I notice my posture is better, I sleep better, and my mood (generally) is a little better. My arms feel more toned, I like the way my butt looks kind of, and my back feels thinner but I don't like the way my tummy or thighs look at all. It's probably going to take a few weeks before I start to see real results and slimmer tum and thighs. I looooved my lunches and dinners I had during the workweek- they were super healthy, super filling, and felt really gourmet. I skipped breakfast a lot, which is bad, and had a few way-late dinners which I need to work on. I didn't get enough sleep, either so that probably is effecting my fitness. I had..... 5 coffees this week so that was really bad. Sinful Saturday was awesome, though I actually didn't eat enough. I had no breakfast, no lunch, grabbed a frappachino, then some curly fries from Jay In The Bay and then another coffee. Then I made chicken paprikash for the family, and had a chocolate torte with coffee ice cream for dessert (Ethan made that...what a chef!) 


Sunday, bad day. Had coffee when I wasn't supposed to, ate left over chicken paprikash for breakfast...minus the chicken so just noodles and sauce. Had a home made burger for dinner, which was semi healthy- had a grapefruit and a banana and apricot with it. Then had some chocolate torte and ice cream. That was the big fail part. 


I'm trying not to beat myself up over the little stuff but I feel really fat, really gross, really inconsistent, and terrible with follow through. I've always been on the first week of some new fitness plan and I always break my own rules and flake out and eat lots and lots of chocolatey fatty goodness instead. Bad. I'd really like to feel fantastic at the end of this 10 week thing, be able to go on my girly spa trip and feel kick ass, be able to afford my rewards, and feel like a new person for my exciting/scary move to Boston. I calculated all the rewards I have to save up for and....it's expensive. I can do it....but now I need to work three jobs to do so AND save for my move. I'm determined to treat myself because it's been so long since I've been treated and I want to be able to celebrate my own successes without feeling guilty. Such an uphill battle. 


But, so, yeah. I got fatter, so that's cool.

Dysfunction and Rebuilding: Trouble With the Ladies

    I have to kick my own ass to make, have, and keep friends. I suck at it. I'm even worse at it when I'm dating. Every Sunday, while I'm planning my week, setting my financial goals, setting aside time to do chores- I literally have to pencil in "call so and so" or "email such and such" or even "spend time with someone." If I don't set aside time to have friends- I don't have them.

  Do you ever notice, if you come from dysfunction, how complicated friendship can get? I don't get women. I have female friends, and I admire tons of gorgeous, fabulous ladies I know, but I just can never understand or read what they're thinking or how they feel about me. When I make plans with a female friend, go to a woman- a mom or a teacher- for advice- I panic and agonize and replay my conversation and interactions with them over and over in my head. I always come away feeling like they hate me or they spent time with me as some sort of pity thing or an inside joke. "Did they say they liked my outfit because they thought I looked fat in it?" "Are they mad at me because I talked too much? Didn't talk enough? Dressed too fancy? Was five minutes late? Mentioned my boyfriend too many times?" "Did they compliment my makeup because they felt like my face was ugly?" "Did they say they really liked how ambitious I am because they know I'll fall flat on my face and I'm really just a nobody?" "Did they say they liked spending time with me because they'd wish I'd leave them alone?"

  When I think I might run into my mom, or if I have to go over to visit, I go into this weird sort of survival-obsessive-primping mode. I spend two hours on hair and makeup. I try on all the outfits I have. I yell at myself. Freak out five or six times about how fat I've gotten. Try three shades of lipstick. "You look like death warmed over, put on some lipstick," my mom would say to me. "You're wearing too much makeup. Who are you trying to impress?" "Suck it in," she'd say. "You're so obsessed with running and what you look like- don't you worry about how neurotic people will think you are?" Everything I did was wrong. Never good enough. She'd always set me up to fall. One time when I was maybe nine, my mom gave me this beautiful summer dress of hers to try on. It was gathered at the top, came down to my knees, and was a royal blue with red flowers. She handed to me like it was her child and told me how she wore it just before her wedding. That she was in her 20's then and weighed 100 pounds. I put it on. I remember that pause-before she said anything. I thought, maybe since it was hers and she loved it so much, she'd love me in it. She kind of giggled and commented on how I barely fit into it- that I would stretch it out and ruin it. She looked at me like I was some sort of pug in a stupid tutu. She always complained about my sister- said she "stole her body." It was a mean, unfair thing of her to say but I always wished she'd say it about me. She didn't.  Some mornings, I wouldn't come out, afraid of what she'd have to say about "today's look." How ugly I was this time.

   Besides appearances, my mom just made everything into a competition. Between me and her. Between my sister and I. Between my friends and I. I never learned to accept the good in myself AND in other's- so I find it hard now to have female friends I don't constantly try to measure up to or out-shine. I even find myself feeling like my character is being judged when I go shopping for clothes or something pretty. Like, somehow, the sales associates are back there snickering about how gross  I'd look in their clothing and how I don't belong. I think I probably end up acting like a real bitch to some poor, unsuspecting retail women because I just can't take what they may be thinking about me. It's not something I'm proud of.

   In a nutshell, women make me wildly insecure and afraid sometimes but I really, really wish I had a lot more positive, loving, genuine female friends around. It's just hard. Every single woman is always smarter than me, more confident, more beautiful, thinner, more stable, more happy, more established, more financially set, people take her more seriously, she's more talented, more creative. Always something. Mostly, I avoid any potential conflict and when I feel inferior, in whatever way it may be, I bolt. Sometimes, though,  I'll pick petty fights and nit pick their flaws to make myself feel better. They leave.

   I find it hard to trust women, harder to bond with them, and hardest to like them without hating myself. Don't get me wrong, I have a few really close female friends- but they've spent a long time trying to work their magic and earn my trust. Well, I lied. I guess I don't really have any "close" female friends. I have a few who I spend time with and hope, one day, to feel genuinely close to. It's still really hard for me to trust women.

   I'm trying this new approach. One where I meet a new person, interact with a girlfriend, or walk into a store and I literally tell myself (in my head): We're the same. I have my insecurities, flaws, and kick ass traits, and so do they. It's not a competition. Be loving. I'm trying to just try and start fresh. Start new friendships without assumptions and comparisons, and maintain them.

   It's totally cheeseball but it's working for me. I'll report back on how making female friends goes.

Tara and the Terrible, Horrible, No Good, Very Bad Day

   
   I have a friend, her name is Laura, and she is my go-to gal. She writes me snuggly letters, makes me grilled cheeses, makes me home made gifts on my birthday, and calls me up when I need a mental check-up. Today, I wrote her this.

   "Sorry I haven't gotten back to your email about exercise and healthiness and obsessiveness versus un....obsessiveness but for now, long story short. I agree with you- I can't make 1,300 calories work. I eat super healthy all day but I go way over that so whatever. I need the schedule I have for workouts because, if I don't lay out everything I need to do and when, I never do it. I just finally want to feel good about myself and feel like I followed through with something. I know it's all about my abuse and where I'm at in my head and my need for control. But I need some control. 

This email isn't so much about that though. It's basically this. I feel: 

1) Anxious. Like really anxious. Like I get home and feel all trapped and the need to be around a lot of people and no people and out doing things. And doing nothing. 

2) Really really really hideous. Like butt-hideous. Trying to be kind to myself is proving to be the opposite. I'm being very very mean and I'd like myself to be nicer but I'm not listening. Bad, self. 

3) Super-dy-duper un loved and un liked and I'm taking anything and everything personally and I'm weepy. 

4) All needy for a mama and papa. But none of the ones that I have available to me. 

5) Super unstable. 

6) Super stupid and lame and panicked about all the choices I've made. 

7) Really in need of some instant gratification with everything. I want to lose the weight NOW, I want to get some pampery treats for myself NOW, I want to confront my dad and re-bond NOW, I want to spend time with all my friends NOW, and I want things done my way. Or I freak out and feel attacked? 

   I get that all this crazy bogus-ness and instability is because I opened up Pandora's shit storm box or whatever by writing about where I come from and re-working the whole healing deal and tackling weight loss and getting healthy and trying to cut off ties with my entire family once and for all (and reconnect at the same time? I don't know what I'm doing) but I am FREAKING. OUT. When I get like this, I get all clammy and don't really express myself very well and most of what Ethan hears from me is "I'm angry with you" or "I need snuggles all the time. You can't do anything. You can't have your own life or accomplish your own things. Your purpose. Is to snuggle and comfort me." Super "push and pull" behavior. I'm all over the place and it's lame and I feel like a bad person for starting my blog and for not being all super awesome and heal-y and healthy. I'm just a lonely blah people don't want to be around. Boo =["

   I'm sharing my freak-out email with you because, well, sometimes I have bad days. I'm not all healed. Everythings not all perfect and peachy keen. And I recognize that I  have a long way to go. "Feeling Young and Being Grown" isn't me preaching about what it's like to trudge through the big, bad, evil things and come out victorious. It's about trudging, and continuing to trudge and seeing the light at the end of the tunnel, somedays. It's about reaching out and sharing and showing each other that it's a lot easier to heal when we understand someone else has been where we are now or where we've been. 

Sex+Sexual Abuse: Bad Reactions From Boyfriends

   I'm in a happy, healthy relationship. He respects my boundaries, knows my triggers, and we communicate (most days). Most importantly, he's patient and genuine about everything he feels and how he goes about things. He's my fiercest supporter and my best friend. He's basically a really kick ass man and I love him to bits! Unfortunately, as most of you know, when you come from abuse, it can be hard to find your way to healthy relationships where you get treated the way you deserve. It's also hard to demand proper treatment and to walk away when you're not being valued and loved. Here are some of the bad reactions I've gotten. Have you gotten any?

  "D"
   I'm one of those "repressed memory" type of survivors. The first time I realized I was sexually abused as a child, I was a freshman in High School.

   This guy from my Biology class saw me and understood my type way too well. I was insecure, cute, had no friends, and had no idea what I was worth. I'm pretty sure I was just his type. He was three years older than me, held back a year because of some sad puppy-dog story he told me about how his parents were split and his mom shipped him out here and told the schools he wasn't at a maturity level prepared for Senior year. Maybe it was true? I fell for all of it.

   He made those stupid googly eyes at me, told me how beautiful I was, how smart, how mature I was- how I wasn't like the other girls. He told me everything I wanted to hear. He told me about how he was a virgin, waiting for the right girl- how he felt like I was the right girl. He invaded my personal space. Texted me, called me, AIM'ed me every chance he got. He asked me on a "date" to the movies and we saw Black Dahlia I think and I took my friend with- thinking it'd keep the date neutral and he wouldn't get the wrong message. I have no idea what he was thinking or what I was thinking but next thing I know, I'm sitting in a movie theater next to my girlfriend, and he's unzipped my pants, rubbing his big-ol'-nasty-ass hands all over parts of me he had no right to. There was groping and ass touching and hands attackin' the vagoo. I didn't even understand what he was doing or what he wanted. I was so mortified and embarrassed and ashamed. I felt so violated. He unzipped his pants and tried to get me to give him a "handy" (which I didn't understand at the time) and I didn't. I just sat there. Shocked.

   Then it hit me. I've been here before. Fragments of my childhood and unpleasant times with my mom hit me in the face and I was way overwhelmed. Mostly, I felt wounded and broken. I told him about what I remembered- how my mom was an alcoholic and had "touched" me and how I was sorry- that I just wasn't the type of person who'd be good at doing "sexy stuff" and that I hoped he'd understand.

   Oh, he understood.

   I think knowing that I was sexually abused was a big green light for him. He heard, " I have an inability to say "stop," a terrible relationship with my parents (which meant no one to tell me I deserved better), and I would always be apologetic and willing to "try." In class, he'd press his gross, eager body all over me- pin me, stick his tongue down my throat, and press me for "affection." I never said no. I felt so disgusted with myself and so trapped in a bad situation I didn't recognize as bad. I thought I was supposed to like what was going on- I was just broken somehow and didn't like sexual things because of where I came from.

   Eventually I found out he wasn't a virgin (he'd probably been screwing everything that moved, but whatever), he drank a shit ton with his buddies, smoked pot- and he was just way too much for me. He overwhelmed me. I think I broke it off or he got tired of waiting so that was that.

  Then I met my next boyfriend. He was a decent guy. Had a lot of friends and was really liked. His friends became my friends and I loved it. I felt included and liked. His guy friends would all comment on how jealous they were- how pretty I was. Things were good for a while and we'd talk every day, either on the phone or online. He was my best friend and I felt so happy to be with someone who didn't push my boundaries. He was respectful of me. Then one day, his friends got comfortable enough to start cracking the typical high school jokes. Something about incest and "mother fuckers" was mentioned and I flipped out. It went on for a week and he'd always joke with them. Jokes about tits, about dicks, about awkward sex, and rape.  I felt so damn uncomfortable. I finally told him about what I had remembered about what had happened with my mom and his first response was:

"No wonder  you're such a good kisser!"

   His second was anger. With me. He said that I was trying to keep him from being himself. That I didn't like the real him and I was trying to change him. Eventually he dumped me. Got back with me out of pity. Then dumped me again. I lost all my friends and they all seemed angry with me for whatever reason. I felt so alone. I cried for months, struggled with some serious depression, and waited for the day when he would come back to me and tell me he loved me. He didn't. (Duh! )

   I can't quite put my finger on why I was so hurt but that was by far the worst pain I've ever experienced in my life. I felt so empty. I think I've always been pretty bad about being afraid of abandonment but he really put the nail in the coffin. I was unwantable. No one would ever want to come back for me. I had no value and if he didn't come back, there was no hope. My past and the "crazy broken person" I was then was just too much for any man, or person, to handle. I felt guilty for existing.

   "J"


   This story is an odd one. We never really technically dated and I never really wanted to date but he's always been a partner of mine and I love the guy. He knows my story like the back of his hand and I know his. He's a fantastic man, actually. Unfortunately, he had his own healing to do, and because I was there to support him, we ended up really bonding, really hurting each other, and he fell in love with me. He saw me go through my break up with "C" and he wanted to be my savior. We talked on the phone for hours at a time and he was always there when I needed a pick me up. He'd call me up just to tell me a joke and give me a giggle. He sometimes still calls and says, "Pudding" because for some reason, it makes me laugh. I led him on because I liked the attention and love- though I was pretty up front about that.

   When I told him about the abuse I'd been through, he sympathized and comforted me but he became really protective of me. He treated me like some sort of delicate flower. I hated it. I couldn't breathe. All he had for me was love and patience- but only if that's what I had to give in return. He was my only real support and the only one who really understood what it meant to be abused, because he'd seen his fair share of trauma in his life as well. Though he never really hurt me or furthered the feelings of abuse and trauma, he really set me back. He made me see myself as someone who couldn't stand on my own two feet without a man to prop me up. Without him. I'd feel lonely and empty when he left or shut me out of his life, like he often did because of his unrequited love for me, with him- I felt angry and walled off from the world. It was hard to grow around him.

Recipes: Baked Beets With Goat Cheese


Here's What You'll Need:
  1. Beets
  2. Goat Cheese
  3. Parmesan Cheese


Here's What to Do:
  1. Preheat oven to 350 degrees and place beets in oven safe covered dish
  2. Bake for one hour
  3. Take beets out and let cool, remove outside peel
  4. Cut into sections
  5. Sprinkle parmesan cheese and goat cheese on top
  6. Enjoy!

Recipes: Spicy Veggie Quesadilla With Fresh Guacamole, Salsa, and Blackbeans


Here's What You'll Need: 

  1. Mixed Shredded Cheese
  2. Tortilla
  3. 1/2 Tomato
  4. One Slice Chopped Onion
  5. Spinach 
  6. One Garlic Clove
  7. Tabasco Sauce
  8. Cilantro 
  9. Two Large White Sliced Mushrooms
  10. Guacamole
  11. Salsa
  12. Black Beans

Here's What to Do:

  1. Put a pat of butter, a dash of salt, minced garlic, and tabasco sauce (to taste) in a pan on medium heat. 
  2. Add mushrooms, spinach, cilantro, and tomato to the pan. Cook until mushrooms are softened and spinach has wilted
  3. Heat a griddle, place tortilla on the griddle, add cheese and veggie filling
  4. Serve with some fresh guacamole and black beans.
  5. Enjoy!
